Ingredients:
2 1/2 cups flour
1 cup of sugar
2 tsp - baking powder
1 tsp - baking soda
1 tsp. cinnamon
1 tsp - ginger powder
a pinch of clove
4 eggs
1 cup of canola oil
1 cup of honey
1 cup hot coffee (no milk)
Step by step:
Mix flour, sugar, baking powder, baking soda, cinnamon, ginger, and cloves in one bowl
Mix eggs, oil and honey (coat your measuring cup in oil before measuring the honey; that way the honey won't stick to the cup) in another bowl
Slowly pour the wet mixture onto the dry mixture and mix until fully incorporated
Slowly pour the hot coffee into the cake batter, and mix until fully incorporated
Pour batter into two lined 'English cake or loaf pans
Bake on 320 degrees for 40–35 minutes (poke the cake thoroughly with a wooden toothpick, if it comes out clean or with a few moist crumbs, the cake is ready, if not, leave it in the oven for a bit longer)
Enjoy.
